India has a vibrant but small population of ethnic Chinese. They are mostly settled in Calcutta in the tanning and footwear trade and have spread all over India as chefs and restaurateurs as well.
The latter however offer Chinese cuisine that is not available in China. It has been adapted to Indian tastes though the use of traditional ingredients like soya sauce and corn flour is maintained.
Among the most famous of their offerings is the Chilli Chicken. I offer a sample recipe to give my readers a foretaste.
Now, even non Chinese street vendors offer Chinese Chilli chicken. To give an indication of authenticity, these vendors would normally hire a Nepalese assistant to fry the chicken in the wok.
